Make: Yogurt Pancakes

My friend Lisa has the most delicious pancake recipe and she kindly gave me permission to share it with you. The secret ingredient is whole milk yogurt, which results in a mouthwatering pancake that is light, moist, and resembles a small crêpe. No need to butter them, as there is plenty of butter in the batter. I bet the mother in your life would love to eat these Mother's Day morning with real maple syrup drizzled on top and strawberries on the side. And, what could be easier than making pancakes with a blender? Ingenious!

Lisa's Yogurt Pancakes

Combine in a blender:

  • 3 eggs
  • 1 cup flour
  • 1 cup milk
  • 8 ounces plain, whole milk yogurt

Add:

  • 2 tablespoons baking powder
  • 1 tablespoon baking soda
  • 4 tablespoons (1/2 stick) melted butter

Blend well. Pour directly from the blender onto a hot, greased skillet; make rounds about the size of a coaster. For extra yumminess, add blueberries on top of the pancakes before flipping.
